Pesto Tuna Melt

Here is a quick and easy way to make a tuna melt minus the mayo.  I have included my recipe for homemade pesto which can be used in tons of different dishes.

tunaShopping List:
Pesto:
1 1/2 cups fresh basil leaves
1/2 cups fresh parsley
2 cloves garlic
1/4 cup almonds
1/2 cup Parmesan cheese
1/4 olive oil
salt and pepper

Tuna Melt:
Italian Bread
Starkist Tuna Pouch - original flavor
grape or cherry tomatoes
sliced provolone cheese

Directions:
To make these easy tuna melts just start by preheating the oven to 350 degrees.  You can slice however many pieces of bread you want and pop them in the oven to toast up a bit while making the pesto.

For the pesto mix all ingredients except the olive oil in the food processor then start streaming in the oil until it is the consistency you like.

Next just mix the pesto, tuna, and halved or quartered tomatoes.

Pile the mixture on your toasted bread and top with a slice of provolone cheese.  Put the tuna melt back into the hot oven until cheese is melted on top.
